KIIN KIIN and Arp-Hansen Hotel Group are embarking on an exciting collaboration to open a new restaurant in 71 Nyhavn Hotel.
Arp-Hansen Hotel Group is now expanding with yet another partnership with one of Copenhagen’s leading restaurants. This time with Michelin-starred Kiin Kiin, which will open SEA by Kiin Kiin in the heritage warehouse at Nyhavn 71. From Sticks’N’Sushi in both Tivoli Hotel and Wakeup in Borgergade to MASH in Tivoli Hotel, we have already created some interesting restaurants to the delight of our many hotel guests and the people of Copenhagen. We are therefore thrilled to be entering into yet another strategic alliance with the extremely talented Thai chef, Henrik Yde Andersen, the man behind the world’s only Michelin-starred Thai restaurant – situated in Copenhagen on Guldbergsgade.
SEA by Kiin Kiin – South East Asian Kitchen – will be designed with the greatest respect for the old warehouse, yet with distinct references to a Hong Kong warehouse from the 1930s.
Henrik Yde shares more about the plans:
“The restaurant has 25 seats at the bar, which will be a gin bar with a selection of 100 different gins, including our own version from our new distillery at Østerbro. The bar menu comprises tasty little snacks and street-kitchen-style appetizers. The coffee is roasted in collaboration with The Coffee Collective. I’ve worked with Mikkeller to develop a beer that pays homage to Nyhavn and the smell of exotic spices in the old warehouses. We will be offering hotel guests and visitors an exciting tea menu with more than 40 different hand-picked teas. And we’ve brought in one of Bangkok’s best bartenders to mix the various cocktails, which will, of course, feature a strong Asian influence. So we hope he learns to love the Danish winters.”
The restaurant will seat 60 and the kitchen will be open every day all year round from 12-noon to 10 pm. The cuisine will be Kiin Kiin classics served a la carte. The menu features 30 different dishes from DKK 95, which guests can mix and match as they choose. We recommend four dishes.
Finally, a restaurant will be built in the kitchen that will seat six. The working title is Kiin Kiin Journey.
Henrik Yde explains: “Kiin Kiin Journey will be a more intense version, where we can work with staging the entire dining experience. The first menu will be ‘A journey through Thailand seen through my eyes’, where I will be serving the dishes I came across when I lived there for five years. The chef will be our current sous chef at Kiin Kiin, Mari Ton. The sommelier will be Voung Lai, who has managed the wines at Kiin Kiin Guldbergsgade for nearly 10 years. The restaurant manager will be Nukool Srimartkul. Finally, there will also be outdoor service when weather permits, with a lunch menu reflecting both the time of day and the seasons.”
